This vegan gal LOVES her veggies, but I have to be honest - I'm not a big fan of fruit. Unless you can dip it in chocolate, I'd rather have savory veggies than sweet fruits. No don't get me wrong, I delight in the first berries and cherries of the summer and who doesn't love a juicy watermelon on a hot day, BUT...I'm generally hard pressed to eat fruit without being reminded to do so.
Months back, in an effort to eat more raw fruits and veggies, we bought a juicer. At the beginning, we used it all the time, but after a little while, our use petered out. Well, as spring is winding it's way back to us, I decided to put our machine back in motion to try and replicate a really yummy juice I had while Rich's folks were in town visiting.
It is SOOOOOOO good, but dang does it have a kick. This juice is not for the faint of heart! But it's so easy, so refreshing and super enlivening!
So here you have it.....
Sommers (loving) Kick In The Pants Juice
Makes 1 serving
2 of your favorite apples (cored)
2 lemons (peeled)
1/2 a long English cucumber
1 spring of Rosemary
Wash and prep all your ingredients and toss into the juicer. I did apples first, followed by lemons and rosemary together and put the cucumber in last. If you wanted to, you could always top up the finished juice with a little coconut water, but I think it's the bees knees, as is.
Drink up darlings! Yum!
